Those of you who know me know I love Ireland and everything Irish, including the fae folk, or faeries. Imagine my delight when my call for healthy recipes yielded a treatise on faerie cookery! I hope this guest post by author John Woodward delights you as much as it delights me!

Any Irish man or woman will tell you that there were Faeries in Ireland
once, but long ago, they left. The year 1848 is often cited, as it
represented the depths of the Potato Famine. The Faeries -- most of them
-- actually sailed away in 1850, crossing the Atlantic in a pair of
clipper ships, under the protection of two Scottish brothers and sea
captains. An enterprising Part-Faerie man named Solomon Murphy had found
unsettled lands for them in the quarry hills above Atlanta. They remain
there to this day, living under a great Concealment. The Human world
believes their home to be a private nature preserve. Their greatest
challenge is to raise enough food for themselves without changing the
appearance of their woodland home. Aside from a tiny farm patch on the
edge, the Georgia Faerie Circle Lands must appear to be uninhabited old
growth forest. Furthermore, it is not the Faerie way to harm or drive
off the animals that share the Lands, so they must be provided for, too.
Faeries
are only three to four-and-a-half feet tall, but they have wings and
fly, so a typical Faerie consumes more calories than a Human should.
They eat no meat, nor do they use the skins of animals for clothing.
(The Faeries never kill, for to do so would break their Covenant with
God and abolish their Powers.) When they arrived in Georgia, they knew
very little about the native foods. Luckily, their new Lands were not
completely uninhabited. There were Cherokee Indians who had hidden from
the mass removal known as the Trail of Tears, a a few escaped slaves.
They taught the Faeries which foods may be gathered in Georgia.
For
over 160 years, the Faeries have practiced their unique agriculture,
which supports them as long as they are diligent and careful. Every tree
that falls is replaced with a sapling fruit or nut tree. They grow
squash and gourds in the sunny clearings, and plant berry bushes on
the hillsides. On the hilltops, they graze sheep and goats, for their
milk and hair. They clear away other vines, so that the grapes have room
to grow. Last, but not least, even the ferns are edible. (It helps
that their Power with Animals enables them to tell the goats and deer
exactly where to eat. They do most of the weeding.)
The Faeries
rarely build fires in the daytime, to avoid Humans seeing smoke over
their Lands. Fortunately, they are nocturnal by nature, so they do most
of their cooking by night. The caves that dot their Lands are close to
the surface, and have little hidden chimneys built in. When they have to
build large fires on the surface, they stretch a woolen canvas between
the trees to hide the flames. They preserve much of their food for
Winter by smoking or drying it.
Here is a typical Faerie Autumn meal, adapted to our cooking methods:
Faerie Squash
One small butternut squash, cleaned and cut into ½-inch cubes
(reserve the seeds)
One acorn squash, cleaned and cut into ½-inch cubes
(reserve the seeds)
Peanut cooking oil
½ cup dried apple
½ cup dried peach
½ cup raisons
1 tablespoon minced fresh ginger
Cinnamon
Chopped pecans
Chopped walnuts
Honey
Preheat your oven to 400 degrees. In a glass or ceramic bowl, combine the
squash with a very small amount of oil. (The Faeries have to make oil
by pressing nuts, so they hardly have any at all, and are very frugal
with what they do have.) Bake covered for thirty minutes. Uncover and
add the apple, peach and raisons. Sprinkle with the ginger and cinnamon.
Bake until the squash is tender.
In the meantime, gently brown the
pecans, walnuts and squash seeds in a flat pan on top of your stove.
When the squash comes out of the oven, garnish it with the nuts and
seeds. Drizzle on a small amount of honey.
Notes: The Faeries
cut up their food with brass knives, because iron is poisonous to them.
The Faeries gather the bark of the wild cinnamon plant and carefully
preserve it, because wild cinnamon needs a long hot summer to grow in
North Georgia, and is not always available. You can use regular
store-bought cinnamon. The Faeries have a few beehives, but they are as
careful with their honey supply as they are with oil.
You can dry apples and peaches in a 200 degree oven on a baking sheet.

I have lost .8 pounds since my last post on Saturday. Sorry for not posting more often, but I was busy substitute teaching yesterday. I am also really busy writing Dog Aliens 1 Raffle's Name so that I can get it published soon. I have decided to only post to this blog when I have something to say. I do still keep track of my daily weight and food intake. I know I will have to do this the rest of my life. It is the price of keeping the weight off.

148.0 I've Kept the Weight Off for Six Months!
Raffle and Oreo have greatly helped me keep the weight off these six months, so they deserve to be featured here. Walking every day is so much more fun with them! If I try to skip the walk, they bug me until I go. Dogs make excellent exercise partners!

Now, I realize this is only true if you let your guard down and stop keeping track of what you eat and of how much you exercise. Sure, if you let yourself go, then the weight is coming back on. I refuse to let myself go every again.
I gained a pound yesterday, but that is OK. I am still well within my weight-loss goal range of 145 pounds to 149.9 pounds. We did our usual 1.3 mile walk to the local park and around it three times and back home down this alley. Here is what I ate:

148.0 Photoshop Elements 10 Manual Costs More than Application (Unless you buy it online)
You will see the irony in this doctored photo if you are familiar with the cover of this book I just picked up yesterday. This blog has been a great motivator for learning to manipulate photos. If you start at the beginning of my blog and browse just through my photos, you can see that in the beginning I barely knew how to use MS Paint, and now I am starting to learn Photoshop. Hopefully in a few months I will actually be posting some good stuff!
I bought Photoshop Elements 10 a few weeks ago from Amazon. The price fluctuates. I think I paid $40. I got the missing manual that should have been in the box yesterday at a brick and mortar Barnes and Noble for $44.99.
Ooh! See? My husband insisted we buy it at a brick and mortar store to support our local economy, but in so doing we paid twice what we should have for this book. You can get Barbara Brundage's missing manual for Photoshop Elements 10 online from Amazon for as little as $23.94 at this time. I am sure that fluctuates, but the program itself is $49.99 right now, making the title of this blog post not true if you buy both online. Live and learn.

147.8 Do You Brush Your Tongue?
Do you brush your tongue with your toothbrush at least once a day? I find that the cleaner my tongue is, the better my food tastes when I do eat. A clean tongue helps keep breath fresh, too, not to mention it just looks better, whenever you show your tongue to people, which let's hope is not often, but still.
I have a strong gag reflex, and so brushing my tongue is a bit challenging. I wait until I am done brushing my teeth, so that there is a bunch of suds from the toothpaste still there, but the toothpaste is no longer solid. I brush my tongue quickly but firmly, starting as far back as I can go without choking, putting the toothbrush straight in, and not trying to brush sideways.
After I brush my tongue, I further clean it by sliding my front teeth along it from as far back as they will go, and pushing the toothpaste suds out into the sink. The suds are always an off color, meaning they include debris which I have just cleaned off my tongue.
Your tongue should always look pink like mine does in this photo. A dirty tongue will look white, especially in the middle and toward the back. This whiteness is food debris and bacteria that feed on the food debris. This is really disgusting when you think about it, and also when you smell it.
This video is about brushing a pierced tongue, but it was the best video I could find on brushing any tongue. You do not need a special toothbrush to do a good job. She brushes her teeth until :55 on the video, when she brushes her tongue.
I maintained my weight perfectly yesterday, much to my pleasant surprise! I had peanut butter toast right before bed, which is never a good idea. At 147.8 pounds, I am firmly within my weight-loss goal of 145 pounds to 149.9 pounds. For exercise, I walked the dogs 1.3 miles in our neighborhood park and did some vacuuming and laundry, which means going down and up the basement stairs. Here is what I ate yesterday:

2 maple bars at church fellowship

Hamburger patty with 2 tablespoons BBQ sauce and steamed broccoli
1/4 cup peanut M&Ms
2 slices of wheat toast with 2 tablespoons chunky peanut butter

148.8 Another Zero Weight Gain Day
I had a zero weight gain day yesterday where I maintained my weight exactly. I went on two mile-long walks and shopped at Costco, so far as cardiovascular exercise goes. That is really a key ingredient for me to keep burning calories. Cardio really helps me keep the weight off. Here is what I ate yesterday:

147.6 Before and After Losing Weight Pics
I lost three pounds yesterday, and am back within my goal weight of 145 to 149.9 pounds. I just took this photo on the right this morning. The photo on the left was taken in August of 2011 at Mt. Rushmore. There is a 70 pound difference. Can you tell? :)
My only disappointment is that I waited to be almost 50 before I made this amazing transformation. Imagine how much better I would have looked at this weight ten years ago. Twenty years ago, I was even thinner, but I was maintaining that by smoking, so that doesn't really count.

The three pounds I lost yesterday were water retention weight from all the sodium in the pizza I ate the day before. For exercise, I walked my two dogs a mile in our neighborhood park. Here is what I ate yesterday to let the sodium leave my body along with the extra water my body retained to balance all that salt:

Portion control is one of the keys to keeping the weight off. When I was fat, I would just set the bag of M&Ms or corn tortilla chips next to me and eat until I didn't want any more.
Today, I check the package to see how much or how many a serving is, and I serve myself that many or that much. Sure, I can go back and get another serving if I really really want to, but most often, I don't.
Portion control is a little tricky because of the way food is packaged. A can of soup has "about 2" servings. One serving of salad dressing is only 2 tablespoons, which is less than a glug from a typical salad-dressing bottle.
I am glad food is labeled by calories per serving and how many servings are in the package and how much is one serving. This way, I can always figure out how much of the package I can eat and only get one serving's worth of calories. If I'm out camping or something and don't have a measuring cup, I can divide the contents of the package by how many servings are in it, to get one serving.

150.0 .1 Over Goal
OK, OK, I have to do a better job keeping the weight off. Eating fajitas when I am so close to the top of my goal range was a bad idea. Fajitas are my favorite, though...
I gained .4 pounds yesterday. I did more than the usual exercise of walking a mile, but not much more. I took an additional walk of once around the park, or about a third of a mile. It was hot yesterday, what can I say.

148.4 Another Zero Weight Gain Day
Another day of perfect weight maintenance! Keeping the weight off is getting more intuitive for me. I am getting a feel for how full my stomach should be, how much I should put on my plate, and how much leeway to give myself when someone shows up with treats or dessert.
I found a summer top that goes with these unusual jeans. I was thrilled to find it! My Spiderman lunchbox now sits up there where the birthday cards are in the photo.

145.6 Quaking Aspen Spokane Valley
I noticed the largest Quaking Aspen trees I have ever seen yesterday, while waiting at the bus stop to come home from substitute teaching. You know how normally it feels awkward, standing at a bus stop and watching all the drivers go by in their cars while you have to take the bus? Well, waiting at a bus stop is not bad at all if you have beautiful Quaking Aspen trees like these to gaze at. I just watched them quake in the wind and listened to the rustling of their leaves for most of the 20 minutes I was waiting for the bus.
The first few minutes I noticed the caps and gowns some of the students had with them. I asked them how it felt to be graduating from high school next week and what they would be doing after graduation. That was fun, too.
I took a short video of these Aspen trees, as well. Yes, that is my voice you hear in the video. It is very short, just a few seconds. If you know what to listen for, you can hear the Aspen leaves rustling as they quake in the wind.

Keeping the weight off is the hardest part for most of us. It is easier this time because I have viewed this as a lifetime lifestyle change, and not just a diet that I was on for a while. I know I can never go back to eating cookies and ice cream whenever I feel like it. I don't even keep that stuff in the house, so that I don't think about it most of the time. I have trained myself to think of an apple with peanut butter as a treat.
I lost 1.4 pounds yesterday. It was probably mostly water retention weight from the salty chili dip I ate Thursday for dinner. I walked the dogs a mile. I walked half a mile associated with taking the bus home from work. I substitute taught, which entails being on my feet most of the day, walking around the room to see what students are up to. Here is what I ate yesterday:

I know I can never go back to eating cookies and ice cream whenever I feel like it. I don't even keep that stuff in the house, so that I don't think about it most of the time. I have trained myself to think of an apple with peanut butter as a treat.
I lost 1.4 pounds yesterday. It was probably mostly water retention weight from the salty chili dip I ate Thursday for dinner. I walked the dogs a mile. I walked half a mile associated with taking the bus home from work. I substitute taught, which entails being on my feet most of the day, walking around the room to see what students are up to. Here is what I ate yesterday:

145.0 Muscle Definition in My Calf and My Forearm
I'm teaching sewing, walking, and single survival classes in this dress today. It was 93 F here in Spokane yesterday, and a dress is really my only option for something cool enough to walk outside in for 45 minutes. Shorts would be too unprofessional for all day, and I don't want to change there.
See the muscle definition in my calf and my forearm! Wow. What a difference a year makes. When I sit in the car with my knees up high in front of me, my thigh muscles are defined as well. It's too bad I waited to be almost 50 before getting into shape, but better late than never, eh?
I got paid yesterday to sit and watch the Zeffirelli "Romeo and Juliet" movie over and over. I adore the costuming and set design. I love my job! During the tomb scene at the end I told the students there is a school of thought which says "Romeo and Juliet" is not a great romantic story, but a farce about how stupid teenagers can be. They had already read the play, of course, and so they knew Juliet wasn't really dead and that Romeo was being too emo. I won most of these high school freshmen over to this school of thought.
The only thing I don't like about this picture is you can see the little bit of extra skin I still have under my chin. I still hold out hope that this will recede after a few more months of keeping the weight off.

144.8 Me at Niagara Falls and Now
Look! You can see my collar bones now that I am size 8! I was happy in this top picture because we were at Niagara Falls and it was beautiful. Look how much happier I am in the bottom picture. The accomplishment of losing 90 pounds outweighed the travel time and expense it took to drive 2,345 miles from Spokane to Niagara Falls last summer when I weighed 220 and wore a size 18.

I have no idea how this picture of my "second breakfast" of strawberries and Hershey's Special Dark chocolate syrup came out so cool! They were in a very ordinary looking white plastic seal-able container. In fact, just before I shot the photo I considered putting them in a more attractive dish. I am so glad I didn't! They were on a white metal counter. My camera was set on automatic, and yes it flashed.
I walked my dog around the park for half an hour yesterday. The park restrooms are open for summer, and there are twice as many picnic tables in the park. I didn't check the water fountain, but I bet it is on once again, too.

144.8 Sweater Dad Gave Me
My dad picked this sweater out and gave it to me for Christmas a few years ago. It is a size 14, and I was a size 18. The trick of wearing loose clothing to look skinnier worked on him. He thought I had lost weight when I hadn't. Dad's Alzheimer's was not recognized yet, at the time. This sweater is a bit too big, and it has seen better days, but I will try to keep it forever.Besides, this sweater matches this mug that Mom bought me at Heavenly Valley, the last time we skiied together.
I am thrilled but shocked that I lost .2 pounds yesterday. on keep trim eating. I was at the bottom of my 145 - 149.9 goal weight range yesterday, so now I am under goal. I am just keeping the weight off. I was sure I had indulged too much and would gain .6 pounds or so, which I would have to lose today. Here is what I ate:

145 Peanut Butter Can Be Healthy
I have to admit, this idea to make peanut butter apples was not mine originally. I got it from my sister's best friend's mom, in 1974. This mom is in fantastic shape -- trim and healthy. She is from England and speaks with an accent.
Her ways were foreign to us. We were kids. We thought she was weird. My sister came home one day and told me, "For lunch, they ate peanut butter on apples!" We giggled over how weird that was. Today, I appreciate this mom's wisdom!
Half of this feast in the picture was my "second breakfast" just now, with the rest of my coffee. I got the apple yesterday at our new Trader Joe's Market, here in Spokane. I tried to shop for fruit at thursdaymarket.org. That was just silly of me. It's only April. They won't have fresh fruit until they open outside May 17th.
See my lifestyle change! Six months ago, I had no idea about nor interest in any farmer's market. Even a month ago I made peanut butter cookies instead of peanut butter apples or peanut butter toast. Today, I know a serving of peanut butter is just 2 tablespoons, and I stick to that.
Dr Tarnower's Keep Trim rules say not to eat peanut butter. I know I am breaking the rules. So far, so good, though. I am keeping the weight off. This way of eating is not just for a little while, for me. It is for the rest of my life. I feel the need to work in the foods that I love so that I don't feel deprived. I love peanut butter!
I gained a fifth of a pound yesterday. That is OK. I was a fifth of a pound under goal weight yesterday, and now I am back at my goal weight of 145. Small ups and downs from day to day are a realistic part of keeping the weight off. We walked the dogs two miles in the rain, shivering in the 44 degree weather without gloves on so we could use the cord microphones on our radios. Here is what I ate yesterday:

144.8 Mouth Hunger vs Stomach Hunger
I am working on discerning the difference between mouth hunger and stomach hunger. In his book that I reviewed recently, "Weight Loss for Wimps: Lose Your Belly Fat, Look Younger and Get Healthy, Sexy and Thin," Kevin C. Myers called this to my attention. Most of my cravings for food are just mouth watering longing for the pleasure of the food. I only really need to eat when my stomach is genuinely growling because it is empty.
Part of my lifestyle change from fat person back to skinny person is I need to retrain myself to realize stomach hunger is a good sign.
Stomach hunger means I didn't overeat at my last meal. I spent most of my life avoiding stomach hunger by eating before I was hungry. I now realize that eating when not hungry is the very definition of overeating. Myers interviewed a bunch of skinny people, and they all wait for stomach hunger before they eat. He says fat people almost invariably eat by the clock, to avoid stomach hunger. I've been so guilty of that.
This picture taken yesterday shows me sitting in front of my computer working, which is how I look much of the time. Right now, in fact! :)
I saw this Harvard Lampoon "The Hunger Pains" parody of "The Hunger Games" on the bookshelves at Wal-mart the other day. I have no idea if the book is any good, but I did think the title was a little funny! You can read a sample the book at amazon.com.
I was going to make more peanut butter cookies, but then I realized peanut butter toast is much healthier and actually more satisfying. Why go through all the work to make cookies if they are just going to sabotage all my hard work to lose those 90 pounds? It is still not Christmas for me without cookies, but the rest of the year I can and will live without them.
I was able to perfectly maintain my weight yesterday. I am keeping the weight off! I am even .2 pounds under goal, at 144.8. We walked the dogs two miles round trip to our closer church and back. Here is what I ate:

145 Maid Marion Shirt

This is what I wore to Palm Sunday church yesterday. The cross is pewter from the Renaissance Pleasure Faire in Novato, 1988. I hadn't worn it since then. Now that I am no longer fat, I wear my jewelry again. The shirt I got Saturday at the Salvation Army Thrift Store, for $1. I call it my Maid Marion shirt. It is exactly my style: pretty and groovy with a hark back to the historical. It's velvet! I would love it more if it were burgundy colored, but that is about the only way I could improve on it.I gained half a pound yesterday and am back exactly at my goal of 145. Part of keeping the weight off is accepting I will gain weight some days, so I have to always be prepared to lose that weight the next day. We walked the dogs 2 miles: to the post office and back, mailing Easter cards.

This is different from most diet books in that it seeks to break down your mental excuses for not losing the weight. It helps you decide to become thin and to stick to that decision. It follows my own personal inner journey pretty closely. I think if I were still back there, undecided, this book would have helped me. 145.8 Ritz vs Banana
I was shocked to find out 5 Ritz crackers is a full serving with 80 calories -- about the same as a small banana! Who can eat just 5 Ritz crackers? Well, I did last night. We didn't have any cookies, so I had these for dessert after dinner. They tasted heavenly! They melt in my mouth.What am I doing eating Ritz crackers anyway? Well, I have reached my weight-loss goal of 145. Now, I am experimenting to see just how many calories I can eat while still keeping the weight off. Exercise plays into it, too. I walked 30 minutes and I gained .6 pounds yesterday, so obviously I can't eat this much every day:
Two small bowls of Special K with organic soy milk (500 calories) (600 mg sodium)
3 cans Diet Coke (0 calories) (120 mg sodium)
One El Monterey bean and cheese burrito with salsa (400 calories) (640 mg sodium)
Handful of raw carrot sticks (35 calories) (65 mg sodium)
One Trident Seafoods Alaskan Salmon Burger (170 calories) (330 mg sodium)

Total Calories = 1225 Total Sodium = 1900 milligrams = 1.9 grams
1225 calories is totally doable. I should not have gained weight eating only 1225 calories. It was all that sodium that did me in!
I was told all my life to watch how much sodium (salt) I ate. I even learned in biology about the sodium/potassium pump that keeps our nerves electrified, and how eating more salt makes our bodies need more water. That's right. I will say this again because you and I both need to hear it, believe it, and act on it:
Eating more salt makes our bodies need more water.
That means our bodies retain water. Our bodies do this to dilute the salt we have eaten so that it is in the correct concentration to allow our nerves to fire electronically, which is how our nerves function. Unfortunately, this means:
1) We are bloated and our clothes don't fit as well, and
2) Our hearts have to work harder because of higher blood pressure caused by sodium bloating.
So, it's really not just about the Ritz crackers.
The Ritz crackers in my picture with the banana are the symbol of a much larger problem. We need to watch not only how many calories we eat, but how much sodium we eat in a day. Clearly, the 1900 mg of sodium I ate yesterday were too many mg of sodium. I think 1000 mg of sodium would be about the maximum I could eat in a day and not gain water weight. Your mileage may vary.
When I first started my diet, my mom told me cooking from scratch would help. My mom-in-law told me to use fresh or frozen vegetables and not canned. They both told me I could eat convenient frozen or canned meals sometimes, but to shop around for frozen or canned meals that were low in sodium. They both said to eat less baked goods and more fresh fruit.
I heard them and I said, "Yeah, yeah." I really thought I had adjusted what I ate, but yesterday proves I still need to change the way I eat. Old habits die hard! I am starting to realize the lifestyle change I need to make in order to keep the weight off is bigger than watching calories and making sure I exercise every day. It is worth it, though!
148.6 Weight Loss Like Time Travel
I am so thrilled that the dresses fit once again! It's like time travel. Unfortunately, the dresses are no longer wearable. They have stains on their backs from water getting into their storage container. It was really fun to put these old dresses on and pose for Scott to take pictures, though!
I lost .8 pounds yesterday even though I ate 9 powdered sugar cookies. I was just hoping to maintain at under 150, but I will take the weight loss because it means I have that much more of a cushion for staying under 150.
Keeping the weight off is the hardest part, of course. My strategy is going to be eating as if I were still on the diet for most meals so that I can have one "normal" meal a day or little desserts throughout the day.
We walked the dogs 2+ miles in the mostly thawed park yesterday. Spring is trying to come! Most of our snow melted yesterday. The birds are singing outside. It stayed above freezing last night and during the days it has been in the high 40's. It would be fine with me if we didn't get any more snow or freezes this year. Just fine!

Aunt Helen's memorial was very sweet. I am really glad I went and saw everyone. My mom gave me a dozen sweaters that I can really use up here. I hadn't seen my cousins in a long time. I got to meet all my sister's new dogs, too, and I especially like this one in the picture with me. He is a rare dog who really wants to make people happy.
Before my aunt died, Scott had ordered me chocolate covered strawberries from Shari's Berries for Valentine's Day. They arrived while I was gone, and he ate some, but I had one for breakfast dessert just now (100 calories). Wow, yum! There are 5 more dark chocolate ones left. I don't really care for the white chocolate ones.
I'm only scheduling 8 diet days this cycle because of Valentine's Day events. There is a ladies' lunch on the 9th and a couples' banquet on the 10th or 11th. I will take a few keep trim days for those and then resume the diet right after that.
I don't want to recall all I ate for the whole week, but yesterday I had:
Veggie omelette, a few bites of hash browns, a few bites of dry rye toast
Two cookies (in-flight snack)
4 ounces of trail mix (peanuts, almonds, cashews, sunflower seeds, raisins, cranberries, M&Ms)
1 crunchy taco supreme at Taco Bell
